01: Chicken-Pine Curry
Filipino variation of curry with pineapples

To start off, you need half a kilogram of chicken that’s already cut-up. You also need 2 tablespoons of curry powder and 6 cloves of crushed garlic. You should also prepare 1 piece of medium onion that’s minced into small pieces and another piece of ginger that’s sliced and slightly pounded. To season the dish, you need 2 to 3 tablespoons of patis or fish sauce, 1 tablespoon of evaporated milk and 1-½ cups of thin coconut milk. You must also get 1 can or 234 grams of freshly cut pineapple chunks (you have to drain the syrup and set it aside), 2 medium-sized potatoes cut into small pieces, and 1 piece of red pepper sliced into strips.
Once you have all the ingredients, you can now begin cooking. First, rub the curry powder all over the chicken and set it aside for 15 minutes. Then, heat a pan with 3 tablespoons of oil before sautéing the garlic, ginger and onion in it. Add the chicken and the fish sauce to intensify the taste. Keep stirring for 5 minutes before adding the pineapple syrup and coconut milk. Let it simmer for 20 minutes until the chicken is fully cooked.
When the chicken is well done, add the milk and potatoes. Let it stand for another 10 minutes and then add the bell pepper and pineapple chunks. Simmer for a few more minutes, and then the dish is ready. Around 8 people can enjoy this meal, with the particular amount of ingredients given.
